Baked Doughnuts

My kids love doughnuts (also spelled donuts) and I've been buying commericial doughnuts for them. My personal favourite is still one with bitter chocolate coating, as it is less sweet as compared to any other flavours. But that was history... I've found a baked version, though it's nothing like the fried ones (it's more cake-like), my children are easily pleased and they are happy as long as I coat the doughnuts with melted chocolate. I choose to omit sprinkles as they contain colourings and preservatives.

Here are 2 trays of baked doughnuts, fresh from the oven. I tossed them over mid-way through baking to get a better browning on the other side.

Melted some bitter chocolate and the kids chomped on these within seconds!

A few flavours to try out:
  1. Matcha
  2. Cinnamon Sugar
  3. White Chocolate
  4. Strawberry Chocolate
  5. Chocolate Chips
  6. Cream Cheese
  7. Blueberry Jam

Baked Doughnuts Recipe
Ingredients
1 cup (100g) all-purpose flour
1/4 - 1/3 cup (50g - 75g) sugar
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 tub (150 gm ) plain yogurt
1 tablespoon canola oil
2 teaspoons lemon juice

Method

  1. In a small bowl, combine the dry ingredients.
  2. Combine the egg, yogurt, oil and lemon juice, mix well.
  3. Stir into dry ingredients just until moistened.
  4. Coat the tube pans with nonstick cooking sprayand dust with 1 teaspoon confectioners' sugar. (I omit this since I'm using a nonstick pan)
  5. Transfer batter into a piping bag and pipe into pan.
  6. Pipe the batter till half full so that you will see donut hole when baked. 3/4 full will not be able to see any donut hole when baked.
  7. Bake at 200°C for 10 - 12 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool for 5 minutes before removing from pans to wire racks.

I just bought a doughnut mould recently, thinking to do for my kids as they also love doughnut. Since ever I start baking, I tried not to buy bakery items from outside store, prefer to give my kids home made bakery..The baking pan you use is specially for doughnut? I have not seen this kind of pan before. I will copy your recipe and will try it out soon.

Just like to check,can i get bitter choc from phoon huat?
Saw the malay cooking on suria last night on donut deco, so tempted to try, but scared the donut turns out too sweet..

Also want to thank you profusely for your advice on the pork floss loaf and your condensed milk pound cake recipe. The pound cake was walloped by my hb and kids the next day..

DG, I actually just found out I've overbaked them as I always turn them over mid-way so need to extend baking time :P Nevertheless, the kids love it! Hahaha!

Sonia, how does your doughnut mould look like? I too try to refrain from buying commercial breads/doughnuts now that I can produce something similar. Taste and look may not be as good as commercial food but at least we can control sugar and chemicals. Thanks for the recipe. Will try it one day.

Cupcake, you can get bitter choc from PH but I prefer to use valrhona. If you are in Singapore, you can buy them from Sun Lik. Else, can use Cadbury Gold Bittersweet Choc from any supermarkets. I use this when I run out of valrhona.

hi

i saw your post some time ago but only went to sun lik today to buy the mould. My baking time is abt 15 mins and the donuts look white. However with a glaze of chocolate, it tastes fabulous. Any idea why yougurt is needed in the receipe? Thanks again for sharing.

I'm no expert here but from my limited knowledge, yogurt helps to give the cake a softer texture.

Thanks for the recipe. My kids love the donuts n it is so easy to do. I really have to watch out the temperature. I bring down my temperature to 160 degrees instead n bake a little longer instead.

I bought a big bar of white chocolate from PH hoping that it melt to coat the donuts but it doesn't. What can I do with the white chocolate.

It all depends on what kind of white chocolate you bought. I don't know much about chocolates as I'm not a fan.
