Steamed Milk Cake

Fresh from the steamer!  Yes, I just made these like 20 mins ago for our tea today.  This is really a very simple recipe and the best thing is, no mixer needed!


The last time I made these, I filled the cup to 3/4 full and had a dome shaped cake.  Today, I filled up to 4/5 full and they smile very nicely to me :-)



I should have used paper liners instead of muffin cups as the cups seemed to have puffed up a little due to the heat.

Steamed Milk Cake
(Recipe adapted from Aunty Yochana's blog, makes about 6 cupcakes)

Ingredients
170 gm. Fresh Milk (I used a mixture of Full Cream and Skim Milk)
60 gm. sugar
100 gm. cake flour
20 gm. rice flour
2 tsp. double-action baking powder

Method
  1. Use a hand whisk to whisk fresh milk with sugar until the sugar has dissolved.
  2. Add in remaining ingredients and stir well.
  3. Spoon into small cups lined with paper cups.
  4. Steam at high heat for 10 - 13 mins. or until cooked.
  5. Remove and cool on wire rack.

This look amazing, without whisk and can have such nice cake, I guess the double action baking powder play the important role.

Ur steamed cake looks very fluffy and soft. I copied this recipe from Aunt Yochana's blog long time ago but have yet to try it out, to many to-do list. I think I shall try it out soon.

Sonia, my kids love this milk cake. Yes, must use double action baking power, else may not work.

I also procrastinate making this but after trying out once, I got addicted as it's really simple. And the important thing is, my kids enjoyed the cake.

Pei-Lin, it's soft and fluffy but I thought it tasted somewhat like Huat Kueh, just that it's a milk version.

Anony, I'm not sure if this works with SRF as double action baking powder is cruial in the steaming process. No harm trying since it's such a simple recipe.

Pearlyn, I'll double the recipe next time I make this so I can fly some over to you ;-)

Your cake looks delicious! I am going to try to make them this weekend. But if I don't have rice flour, can I subsitutue them with something else or leave that out of the recipe? What is the purpose of rice flour in a recipe?

I don't know what to replace but I think it's ok to omit rice flour since the amount used is small.

Irene, if you see yochana's pics, her cakes didn't "smile" too. I'm not sure if the end result should be round or smiling.

Hi, could you advise if it's possible to fully substitute fresh full fat milk for skim milk in this recipe? I want to make the cake fat free.. Thanks very much..

Hi,BH...I've been lurking around your fantastic blog for some months now, and i must say that it has provided me ideas on what to make for my son who's 2+ as snacks. Thanks!
I've tried this recipe twice but I don't seem to get the nice fluffy texture that u did. It is very "dense" instead and harden even more when it cooled. My son finished them all tho...asking for more "muffin cake" after that. Guess he's quite a rubbish bin after all.
Is it due to the extrafine flour i use instead of cake flour? or becoz i used a wok to steam? Thanks...i'm determine to do this until i get the fluffy cakes like yours! :Ϸ
