I used to adapt Sister E "recipe" for apple "soup", basically it's just green apples, chinese almonds and candied dates. But I googled and found out that dried figs are good for cough too so I decided to cook it the savoury way ie to add in some meat.
It is essential for me to cook a big portion and freeze, economies of scale and minimise cooking. But of course, you can always half this recipe easily.
(serves 6 - 7)
5 - 6 red delicious/gala apples (don't use China Fuji apples)
500g ribs/lean meat (blanched)
30g apricot kernels/chinese almonds (南北杏) *
4 honey dates (蜜枣)
70g - 80g dried figs (无花果) #
2000 ml water
Salt to taste (I did not add this as the soup is naturally sweetened)
* I bought the premix pack, if you are mixing on your own, use 2 南杏 : 1 北杏
# I use a combination of both US and Chinese dried figs
- Peel and core apples, cut into wedges.
- Rinse chinese almonds, candied dates and dried figs.
- Blanch ribs/lean meat.
- Bring water to boil and add all ingredients. Using medium fire, bring water to boil again, reduce to small flame and simmer for 2 hours. Serve warm.
Mum used to make this for me. I'm sure going to ask her to make me some after seeing this :)
I really love this!
My goodness!! It's been years since I last had 蘋果湯!! Got to give this a shot as we always have apples stocked up at home!! Thanks.
This soup is yummy! I cooked this soup before without adding candied dates, next time I will add in some. I used fresh fig instead of dry one.
wah, this soup look so healthy and should full of natural apple sweet, will try out soon. Thanks for sharing.
Hi You mention that you freeze this soup. May I know how long can I freeze this before final consumption? And do you freeze just the liquid soap or all the ingredients as well? Thanks for the great recipe!
For my frozen soup, they do not stay in the freezer for more than 2 weeks although I'm sure they can be kept for a longer period. I only freeze the soup.
Wow, now only I see ur version of apple soup.
Mine is much much simpler. I guess adding dates, figs and almonds will make the soup all the more delicious. I do agree that no salt is needed as it is already very "sweet".
Thanks for sharing.
Wendy, although your recipe uses less ingredients, I'm sure it tasted great too!
Hi tks for sharing recipe. Just wondering if I could use chicken instead of pork? Tks.
Lyn, I have cooked this soup with both chicken and pork before.
