Mushroom Chicken Soup (茶树菇鸡汤)

MIL gave me some dried Agrocybe Aegerita (茶树菇) 2 days ago and was told that this ingredient helps to strengthen the stomach and kidneys.  It is also believed to have anti inflammatory, anti cancer and anti tumour properties.  Her way of cooking is simple, just meat, 茶树菇, red dates, wolfberries and salt to taste.

I cooked this for lunch yesterday and my kids enjoyed the soup (no one likes the 茶树菇 though).

Mushroom Chicken Soup (茶树菇鸡汤)
Ingredients
500g pork ribs/lean meat/chicken meat
50g dried agrocybe aegerita (茶树菇)
2 litres water
15 - 20 red dates (红枣)
a handful of wolfberries (枸杞)
salt to taste (optional)

Method
  1. Soak agrocybe aegerita in water till soften.  Trim away the ends of the stalks.
  2. Blanch meat.
  3. Bring 2 litres of water to boil and add all ingredients (except wolfberries) in a pot. Using medium fire, bring water to boil again, reduce to small flame and simmer for 2 hours.
  4. Add in the wolfberries and let it brew in low fire for another 10 mins.
  5. Season with salt (optional) before serve.

I remember I tried this 茶树菇 in Hong Kong. I really enjoyed the soup very much but alas...I'm allergy to this type of mushroom. My face swollen in the middle of the night. So now I'm very careful when taking mushrooms.

I know ... Kids can be very picky eaters ... Sigh ... even my adolescent brothers ... (Hehe, I just got over with my adolescent era!) That's why sometimes the thought of having my own kids scares me off, LOL! (Not to mention, having a fussy hubby also freaks me out!)

I love any kind of herbal soup. Yours would definitely make a healthy lunch (especially for someone fat like me!)

Anncoo, I've heard of mushrooms allergies too, didn't occur to me until you mentioned. Thanks for the reminder, thank goodness my kids are ok eating them.

Thanks for sharing all the soup recipes! Saw Shing Shong selling the willow mushrooms, quickly grabbed them on Sat, going to boil them tonight.
My dd2 has poor appetite all along and I have been cooking soups to nourish her.I ve ran out of ideas what soup to cook, and your soup recipe came just in time;)
