Ribena Konnyaku Jelly
Ingredients
I packet Konnyaku Jelly Powder (10g)
150 grams Caster Sugar *
850ml Water
100ml Ribena blackcurrant juice cordial *
1 packet of Natadecoco
Method
- In a small bowl, mix konnayku powder and caster sugar together.
- In a medium pot, bring water to boil. Pour the konnyaku mixture into water gradually and stir till sugar dissolved.
- Turn off flame and keep stirring for about 5 mins, till the bubbles dissipates and the mixture becomes clear.
- When the mixture is slightly cooled, add Ribena and stir well.
- Put pieces of natadecoco into prepared moulds, then pour the Konnyaku solution into the moulds.
- Leave to cool and chill in fridge before serving.
You may adjust the sugar/Ribena accordingly.

One thing i always fail is that my fruits always float up to the surface, creating a fruity bulge :O unlike yours, the nata de coco sit so nicely inside the jelly.

ReplyDeleteUr konnyaku mixture could be too hot. Once I made manggo pudding (uses konnyaku too), and the first few that I filled up, the nata floated up and the last ones that I filled sank. I made 300 servings with a few batches and, that's why I found out.
I love the colour of this jelly.

ReplyDeleteTks wendy for the answer! I must try again when the jelly mixture is luke warm. Once I panicked when the saw the bottom almost setting. Guess got to keep practicing to perfect it.
ReplyDeleteI also added some "tadpoles" in the jelly. My JELLY MONSTERS walloped the 4 trays immediately aft I took out from the fridge!

wendy, thanks for sharing your experience and I encountered the same problem too. You did 300 servings all in small moulds? Kudos to you! I did your mango pudding and gave up after filling just 3 trays! Too time consuming. I'm not a big fan of jellies/agar agar but DH and kids are.
