But instead of mixing into the batter, I'll suggest you pour the batter into the muffin cups (1/2 filled), spoon in 1 tsp jam, then cover with more batter till almost 7/8 full. Will leave the marinate on longer next time to make them extra flavourful.<br /><br />Btw,I have some spare mango jam to quickly get rid of. Am thinking of using the blueberry muffin recipe and use the mango jam instead of the blueberries. Will cut down on the amt of sugar since the jam has sugar already.
