Kids just love carousel rides and I just cannot understand why. I don't enjoy rides going round and round, makes me giddy all the time. I'll rather go for more exciting rides, give me roller coaster anytime.</div>

The first time I saw a carousel cake was in <a href="http://wendyinkk.blogspot.sg/2010/09/lydias-birthday-party.html">Wendy's blog</a>. I never knew such a cake exist. I told myself, one day I'll make this cake, one day.... To my own surprise, I decide to make it for DD3 this year. All my children are unique but DD3 is exceptionally special as her birthday falls on 29 Feb. I mean, how many of us can plan our birthdate to be on this date?</div>

To celebrate her very special day, I decided on a carousel cake for her school celebration. But this decision got me really busy. I want the cake with mostly edible items/decorations, and not simply relying on some plastic materials/toys. Everything must be handmade, from scratch.</div>

Wendy made her horses using chocolate, I'm no good in handling chocolates so this option is out. After a few sleepless nights, I decided on a <a href="http://blessedhomemaker.blogspot.sg/2009/12/chocolate-gingerbread-cookies.html">gingerbread cookie</a>. I didn't want butter cookies as I'm not a butter person. Moreover, this gingerbread cookie is a chewy cookie, relatively light (ie weight) if you compare with other cookies. I made the cookies 3 days ahead, at 1am. By the time I was done washing and packing up, it was already 3 in the morning. The next few nights weren't any better. I had to pipe the outline, leave to dry before I could flood the cookie and start piping the colours. A lot of time was spent on the cookies.</div>

For the cake base, I made an orange chiffon cake with 6 eggs. I only like chiffon cakes in layered cakes, they are so light and soft. However, that's where my fear comes in. Can the chiffon cake support another cake on top? I read through Wendy's entry again and again, it seems that it is doable to just stack the cake with a middle support and some straws.</div>

I wanted to make my own candles too upon seeing <strong>NC</strong>'s pictures but she told me she has extras and offered me one! Yippy, now I don't have to make my own.</div>

Looks like I'm all done? Wrong. I made 2 portions of <a href="http://blessedhomemaker.blogspot.sg/2011/03/swiss-meringue-buttercream.html">SMBC</a> (black raspberry powder) but they don't look like it is enough for the fillings, crumb coat and frosting of both cakes. I suspect it's probably enough for 1.5 cakes. I do not have enough time to make another batch so did a quick check with my neighbor, <strong>NC</strong>, to see if she has any frozen stash. Thankfully I have this neighbor who bakes. She did a few trials for her daughter's birthday cake just 2 weeks ago and there were leftover IMBC (red raspberry powder) in her freezer. I don't care, I don't mind, I just grabbed her offer and frosted the bottom cake with her IMBC and the top cake with my own SMBC. I believe I could have done a better decorating job if I had sufficient buttercream.<br />

Bake in a preheated oven on 125C for 25-30 mins. The bak kwa is ready when the entire top surface is dry to the touch and is holding together without breaking. The underneath of the bak kwa will be moist but it is ok. When slightly cool, use a kitchen scissors to cut the bak kwa into squares or any shapes/size you like.</div>

Cool completely. Place sheets of of baking paper between each slice of bak kwa. Wrap with clingwrap and keep in a container to chill/freeze. When needed, reheat in grill/microwave/toaster oven/oven.</div>

<strong>Blue Pea Flower Konnyaku Jelly</strong><br />
<strong>Ingredients</strong><br />
200 ml hot water<br />
1 tbsp dried blue pea flowers<br />
1 packet of konnakyu jelly powder (you may use agar agar powder too)<br />
180g sugar (add more if you have sweet tooth)

900 ml water (we prefer a softer texture)</div>
Some pandan/screw pine leaves, washed and tie into knots

<strong>Method</strong><br />

<li>In a small bowl, soak the blue pea flowers with hot water. </li>
<li>Leave it for 30 minutes or more (I poured out the water and reheat in the microwave and pour it back into the flower). Sieve it and retain the blue liquid.</li>
<li>Mix konnyaku jelly with sugar in a small bowl, set aside.</li>
<li>In a medium pot, add the remaining 900ml of water and bring to boil over medium fire.</li>
<li>Add in pandan leaves and blue liquid. Simmer for 10 mins.</li>
<li>Sprinkle the konnyaku mixture into water gradually and stir till sugar dissolved. Remove pandan leaves.</li>
<li>Pour into prepared jelly moulds and leave to cool. Refrigerate for a few hours before serving. </li>

Combine everything except shortening and mix to form a dough.</div>

Put in shortening and knead until dough is smooth. Add slightly more flour is dough is way too sticky to handle. If the dough is sticky but can retain its form, like not slacking down, just continue to knead, the gluten just hasn’t form, there’s no need to add extra flour.</div>

Cover and let dough proof until double, about 45 mins.</div>
</li>

Punch down dough and knead for 1-2 minutes.</div>

She learns this soup dish from her MP, <a href="http://www.parl.gov.sg/mp/baey-yam-keng">Mr Baey Yam Keng</a> and I've been cooking it whenever I need a quick fix. I have another recipe of cooking bitter gourd with carrot but for that recipe, I need to simmer the soup for an hour.</div>

Using the regular recipe, I tweaked the method a little as I was rushing to leave the house. I skipped the glazing as I personally find the piglets too sweet when I made them last year. Without the glaze, the mooncakes' appearance are matte but still, I think they look alright.</div>

<strong>Traditional Baked Mooncakes</strong></div>

Yield 11 pieces weighing 34g each</div>

(A)<br />
200g Hong Kong Flour<br />
<br />
(B)<br />
120g Golden syrup/Sugar syrup<br />
60g Peanut oil (I used soy bean oil)<br />
1/4 tsp Alkaline water<br />
* mix together<br />

<strong>Method</strong><br />

<ol>
<li>Sift hong kong flour into a mixing bowl. </li>
<li>Pour in (B), combine well to get a smooth dough in one direction. </li>
<li>Cover with cloth, let it stand for 20 minutes. </li>
<li>Divide dough to portions of 34g each. </li>
<li>Roll into a ball,</li>
<li>Lightly flour the mould. Place mooncake in mould, flatten, dislodge the mooncake (I used a cookie cutter with stamper).</li>
<li>Bake in a preheated oven at 180°C for 15 mins, remove and let it cool for 10 mins. Continue to bake for another 10 mins at 180°C.</li>
<li>Remove mooncakes from oven and leave to cool. </li>
<li>Store for 3 days before serving</li>

1 packet of konnakyu jelly powder</div>
170g - 200g sugar<br />
1100 ml of water (we prefer a softer texture)<br />
12g ginseng tablets

<strong>Method</strong><br />
<ol>
<li>In a small bowl, mix konnayku powder and caster sugar together. Set aside.</li>
<li>Dissolve 12g ginseng tablets with 200ml of hot water.</li>
<li>In a medium pot, add the remaining 900ml of water and ginseng mixture together. Bring to boil over medium fire.</li>
<li>Sprinkle the konnyaku mixture into water gradually and stir till sugar dissolved.</li>
<li>Add the wolfberries into konnyaku mixture and mix well (you may steep the wolberries with ginseng water first)</li>
<li>Pour into prepared jelly moulds. Refrigerate for a few hours before serving. </li>

<strong>Swiss Roll Recipe</strong><br />
<strong>Ingredients</strong><br />

(A)<br />
6 egg yolks<br />
20g sugar<br />
60g fresh milk<br />
45g corn oil<br />
100g plain flour/cake flour<br />
15g corn flour<br />
<br />
(B)<br />
6 egg whites<br />
70g sugar<br />

Ice cream of your choice, 2 flavours<br />

<strong>Method</strong><br />
<ol>
<li>Lightly whisk the egg yolks together with 20g sugar. </li>
<li>Add in fresh milk and corn oil, mix well. </li>
<li>Sift in plain/cake flour and corn flour and stir well. Set aside. </li>
<li>In another bowl, using an electric mixer, beat till egg whites are frothy. Add in sugar gradually and beat till stiff peak. </li>
<li>Fold in 1/3 of the whites into the yolk mixture using a rubber spatula till incorporated. </li>
<li>Pour the mixture to the remaining egg whites and fold in gently till incorporated. </li>
<li>Pour batter into lined 11" x 14" pan. </li>
<li>Using a spatula, level the top evenly. </li>
<li>Bake @ preheated oven of 180C for 12 - 13 mins. </li>
<li>When the cake is cooked, remove from oven and leave to cool completely. </li>
<li>Spread a layer of whipped cream/butter cream/jam onto the sponge cake. Roll it up and chill in fridge. </li>

<strong>Chocolate Fudge</strong><br />

3 tbsp of natural unsweetened cocoa powder</div>

<strong>Method</strong><br />
<ol>
<li>In a small saucepan, whisk together the sugar, cocoa powder, cornflour and water. </li>
<li>Place the pan over heat, and stir constantly, till it begins to thicken and is smooth (for about 2 minutes). </li>
<li>Remove from heat and mix in the butter and vanilla. Keep aside to cool . </li>

<strong>Assembly</strong></div>
<ol>
<li>Cut the Swiss rolls into equal slices. </li>
<li>Cover the bottom and sides of the bowl (I used a loaf pan instead) in which you are going to set the dessert with cling film/plastic wrap. </li>
<li>Arrange swiss roll slices at the bottom and sides of the pan, with their seam sides facing away from the pan. </li>
<li>Cover the bowl with plastic wrap and freeze till the slices are firm. (I missed out this step) </li>
<li>Soften the first flavoured ice cream (for my case, it's raspberry ripple). Take the bowl out of the freezer, remove the cling film cover and add the ice cream on top of the cake slices. Spread it out to cover the bottom and sides of the bowl. Cover the bowl with plastic wrap and freeze till firm. </li>
<li>Add the fudge sauce over the first layer of ice cream (chocolate chip ice cream for me), cover and freeze till firm (I left it overnight). </li>
<li>Soften the second flavoured ice cream and spread it over the fudge sauce. Cover with plastic wrap and freeze for at least 4-5 hours till completely set . </li>
<li>Remove the plastic cover, and place the serving plate on top of the bowl. Turn it upside down and remove the bowl and the plastic lining. If the bowl does not come away easily, wipe the outsides of the bowl with a kitchen towel dampened with hot water. The bowl will come away easily. </li>
<li>Keep the cake out of the freezer for at least 10 minutes.</li>

In my previous post, I shared that I made a mousse cake without a cake ring. I'm going to share how I did it here. Unfortunately I did not take pics of the first few steps as the cake was assembled at around 1am and lighting was no good.</div>

Tear a big sheet of aluminium foil and place it in a cake pan, making sure the ends are outside the pan (see pic below). I used the same cake pan for baking the cake.</div>

10 years today, I became a mother. The night before, we were watching a movie on TV back home, in a very relaxed environment. I thought I felt some contractions, but the pain wasn't too intense so I brushed it off as a false alarm. We went to bed after the show and I found myself awaken by the pain in my belly and lower back. Took a shower and got all my things ready, I woke DH up. As it was in the wee hours, traffic was smooth and we got to the hospital within 25 mins. The nurse asked if I needed a wheelchair which I gladly declined. However, the walk from the lobby to the lift seemed to take ages. I walked and paused to catch a breather when the contractions came. Nevertheless, I made it to the labour ward without much effort. After a check, I was only dilated 3cm so the nurse gave me a <a href="http://www.babycentre.co.uk/pregnancy/labourandbirth/painrelief/pethidine/">pethidine</a> jab and I went to sleep. I woke up a few hours later and found myself in intense pain. The nurses offered me <a href="http://www.babycentre.co.uk/pregnancy/labourandbirth/painrelief/entonox/">Entonox</a> but I found it to be useless (I later found out it was because I didn't inhale the gas correctly). The doc was called and she arrived within 10mins (we always grumble gynaes earn big bucks but they work odd hours too. So let's not be too hard on them). I was in too much labour pain that I didn't even know my doc performed an <a href="http://www.babycenter.com/0_episiotomy_165.bc">episiotomy</a> on me. I only found out about it when she was stitching me up hahaha</div>

The baby was out in 4 pushes and I'm thankful my labour pain was a mere 4 hours from the time I woke up to the time I delivered. I delivered without any <a href="http://www.babycentre.co.uk/pregnancy/labourandbirth/painrelief/epidural/">epidurals</a> too. My doc praised me for being such a brave girl and I felt proud of myself. I think the words of encouragement do help a new mother feel good about herself.</div>

Now back to the cake. I've not maked a layered cake for a long time. My plan was to make a non-baked marshmallow cake to ease my job. But DD1 specifically asked for a gummy bear with matcha/green tea cake. I spent some time on the internet, trying to get ideas. Honestly, my thought of a gummy + matcha cake sounds weird. Nevertheless, I tried my best to fulfil and came out with this cake.</div>

Then I went on to bake 2 cakes, one matcha flavour and one chocolate, just so I could have the contrast colour when the cake is cut. I was debating between a matcha mousse or a chocolate mousse. Birthday girl wanted a matcha flavour, so the answer is obvious.</div>

If you were to ask me, they don't taste anything like the commercial gummies. But it is a quick and easy treat that you can whip up anytime at home without running to the stores.</div>

<strong>Homemade Gummy</strong></div>
<div style="text-align: justify;">
<strong>Ingredients </strong></div>
<br />
85g flavoured Gelatin powder <br />
2 tbsp unflavoured/plain Gelatin powder <br />
125ml water<br />
<br />
<strong>Method </strong><br />
<ol>
<li>Pour water into a small pot. Sprinkle both gelatin over the water and let it sit for 10 mins.</li>
<li>Place pot over medium low heat and cook till all gelatin dissolve. Do not boil. </li>
<li>Remove from heat and leave to cool slightly.</li>
<li>Lightly oiled plastic molds with vegetable oil</li>
<li>Pour melted gelatin into it. </li>
<li>Leave it in the freezer for 5 mins only</li>
<li>Remove from freezer and pull out the gummy bear from the mold. </li>

Early this month, I saw some herbs being sold in the local supermarket near home. There were sage, rosemary, thyme and sweet basil. I've not read up on sage so I decided not to buy that. The thyme on sale doesn't look fresh and I reckon it probably won't survive repotting. It's now between rosemary or basil. Prior to this, I've googled and read up on growing herbs from cuttings. Although it looks easy with rosemary, I didn't have much luck in my previous attempt. Basil seems easier as you can soak the stem in water for 1-2 weeks and roots will grow.</div>

It took only 5 days for the roots to grow. I transferred them to a pot of soil and diligently bring them into the house every morning to get more sunlight. Before I bought the Airfryer, I used to bake it in the oven, which takes around 10 - 15 mins @ 180C. I experimented with the Airfryer and it took me approx.5 mins to get it done. Fret not if you do not own one, like I've said, you could always bake it in the oven, or try out Wendy's pan method.</div>

<li>Preheat Airfryer for 2 - 3 mins @ 120C - 140C. You can always use a higher temperature and cut down on the cooking time but my suggestion is not to go beyond 160C if you are using the Airfryer (for oven, I used 180C for 10 - 15 mins).<br />Cube some stale bread to desired size.</li>
<li>Toss in melted butter and olive oil until well coated.</li>
<li>Pour in cubed bread and cook for 2-3 mins.</li>
<li><div style="text-align: justify;">
Toss and fry for another 2 - 3 mins.</div>

<li><div style="text-align: justify;">
Cool completely and store in airtight container (I didn't use airtight as it usually doesn't last for more than 2 days)</div>

6 large chicken wings, approx 700g (separated at joint)<br />
2 tbsp dark soya sauce<br />
2 tbsp light soya sauce<br />
1 tbsp of sugar, or honey <br />

<li>Serve with fluffy rice.</li>

I used to have a small rice cooker but I find it occupies too much counter space. My parents needed another rice cooker so I passed them mine since the rice cooker only serves one purpose.</div>

When the children are still young, my way of cooking rice is to steam it. I love the lingering rice smell in the kitchen. But as the kids grow, I need to cook more rice so steaming gets a bit tricky as that means I'll need to use a bigger pot.</div>

During our holidays in Australia, we cooked rice using the pots in the service apartment we stayed. It wasn't that difficult, just need to ensure that when the water boils, it is time to turn down the flame and simmer till the rice is cooked.</div>

I just realised I've not updated my blog for more than a month. There are supposingly 2 birthdays in April (DH and myself) but I've been so busy I didn't bake a single cake. I was busy preparing for our 2nd F&E trip to Taiwan. We went Taiwan last Nov for a 10D/9N F&E trip. I spent about 2 months working out the itinerary, liaising with hotels/minsu and drivers. It sure is a lot of coordination work done. Many kind people tell me it is easier to just book a tour package. I can still remember very clearly when I went to USA some 12 years ago, we joined a package tour. The trip was hectic with much traveling, checking in and out of hotels on a daily basis. When I returned from the 14D trip, I lost 4kg because I couldn't eat well and was having motion sickness.</div>

With DH studying in Australia, we did our first F&E trip and fell in love with it. We planned our itinerary but never stick to it 100%. Now that is the beauty of going on a F&E trip. You can plan beautifully but you don't necessarily have to follow suit. Hahaha! And when you are traveling with young children, I find it very stressful to follow a package tour.</div>

Besides the planning of our trip, I have another eczema flare-up. This is my 3rd week, going into my 4th week of flare-up. When I have a flare-up, it is usually with urticaria (hives). The itch is unbearable, most often than not, I found myself scratching myself vigourously in the middle of my sleep. And then I'll be up the whole night for at least 3 hours. Some eczema patients have localised eczema, which is only concentrated in one or a few parts of their body. But for me, my flare-up is all over. If you've seen a person with chicken pox, that's exactly what I'm having now, except that mine is eczema with a heavy load of concentration on the chest (I thought it looks very much like a Singapore map on my chest!). I've gone to see a dermatologist 3 times within 4 weeks. Was prescribed antihistamine (for urticaria), steriod cream and moisturiser for my eczema. However, these medicine don't stop my itch and sure didn't bring down my eczema. I've been in distress, utterly digusted with my skin condition that it is affecting my personal life. I deliberately send DD3 off to school later than usual, and pick her up 5 mins later so I don't get to meet any of the parents waiting outside the school. And I try to walk the dog in the wee hours to avoid meeting any neighbours in the lift!</div>

Finally, during my visit to the dermatologist last Friday, I was prescribed oral steriod in addition to cream steriod. Besides oral steriod, I'm also on steriod shampoo now. The moisturiser prescribed has changed from a S$3/tube to a S$37/tube. But as long as it is effective, money is not the issue now.</div>

After 3 days of oral steriod, I'm finally feeling better now (that explains why I can sit down in front of the computer to post this entry). 12 more days to go and I believe I'll just get better each day.</div>

I don't cook as much as I used to, and definitely no baking at all. With steriod cream and moisturiser from head to toe, I'm worried some drug may go into the food I'm preparing. When I returned, I turned up the temperature back to 200C and cooked for another 30 mins. All in, it took me 1.5 hrs to complete this roast pork. So I made these again for DD3's birthday celebration in school, just so I can take a picture of it again and post it in my blog.</div><br />
<strong>Bandung Konnyaku Jelly</strong><br />
<strong>Ingredients</strong><br />
I packet Konnyaku Jelly Powder (10g)<br />
100 - 120 grams Caster Sugar <br />
900 ml Water<br />
120 ml Rose Syrup <br />
some grass jelly, shredded<br />
2 - 3 Tablespoon Evaporated Milk <br />

<ol><li>In a small bowl, mix konnayku powder and caster sugar together. </li>
<li>In a medium pot, bring water to boil. Pour the konnyaku mixture into water gradually and stir till sugar dissolved.</li>
<li>Turn off flame and keep stirring for about 5 mins, till the bubbles dissipates and the mixture becomes clear. </li>
<li>When the mixture is slightly cooled, add rose syrup and stir well.</li>
<li>Remove half portion of rose syrup mixture and pour into prepared mould.</li>
<li>Add grass jelly into rose layer.</li>
<li>Mix 2 - 3 tablespoon evaporated milk to remaining rose syrup mixture to make bandung.</li>
<li>Pour bandung on top of rose layer.</li>
<li>Leave to cool and chill in fridge before serving.</li>

<strong>Method</strong><br />
<ol><li>Preheat the oven to 170 degrees C. Grease cookie sheets or line with parchment paper.</li>
<li>Sieve flour, baking powder and baking soda into a mixing bowl.</li>
<li>Add in coarse peanut, ground almond and sugar.</li>
<li>Add oil and mix well till a dough forms.</li>
<li>Shape into small balls and poke with a chopstick (I used a straw here)</li>
<li>Apply eggwash (optional) and bake @ 170C for 15 - 20 mins</li>
